Access Hollywood Live: Calorie-Busting Thanksgiving Stuffing Recipe

Just four days until it’s time to chow-down on a Thanksgiving feast! Mouth-waterting turkey, potatoes, pumpin pie — and stuffing.

But the holiday doesn’t have to be a time to worry about counting calories.

Cooking Light contributing editor Allison Fishman stopped by Access Hollywood Live with recipes for healthier yet tasty versions of the classic calorie-busting stuffing. Here’s one for just over 200 calories per serving.

Ciabatta Stuffing with Chestnuts & Raisins:
(serves 12)

Ingredients:
10 cups cubed ciabatta bread
2 tbs. Extra-virgin olive oil
1 1/2 cups chopped celery
1 cup chopped onion
1/2 cup chopped fresh parsley
1 tbs. chopped rosemary
1 tbs. chopped sage
2 cups peeled chestnuts, chopped
1/2 cup golden raisins
3 cups low-sodium chicken broth
1 large egg
Salt & pepper

How-to:
Pre-heat oven to 350-degrees. Arrange bread in a single layer on a baking sheet. Bake for 25 minutes. Place bread in large bowl.

Heat a large skillet over medium heat. Add oil to pan, then add celery and next 6 ingredients. to pan; cook 15 minutes or until vegetables are tender, stirring occasionally. Add celery mixture, chestnuts, and raisins to bread; toss well. Combine chicken broth and egg, strirring with whisk. Add broth mixture to bread mixture, tossing gently.

Spoon bread into a 13 x 9-inch baking dish coated with cooking spray. Bake at 350-degrees for 50 minutes or until top is lightly browned.
