Access Hollywood Live: Devin Alexander’s Healthy Summer Recipes

“Biggest Loser” chef Devin Alexander paid a visit to Access Hollywood Live on Tuesday to show Billy Bush and Kit Hoover a few healthy, tasty summer recipes featuring grapes.

Devin, who is a paid spokesperson for California Grapes, is also the author of the new cookbook, “The Biggest Loser Flavors of the World Cookbook.”

Prosciutto-Wrapped Grapes

4-1/2 ounces very thinly-sliced prosciutto, cut into 36 relatively equal strips (about 1-1/2 inches wide by 3-inches long, if possible)
36 black seedless grapes
36 decorative toothpicks

Wrap a strip of prosciutto around each grape. Arrange them on a large plate or platter and place a toothpick in the center of each grape. Serve immediately.

Makes 6 servings. Each (6 grape) serving has: 66 calories, 6 g protein, 6 g carbohydrates, 2 g fat, less than 1 g saturated fat, 17 mg cholesterol, trace fiber, 570 mg sodium

Great Grape Baby Green Salad

12 cups mixed baby greens
2 cups halved red, green or black seedless grapes
1/4 cup walnut pieces
3 ounces (about 3/4 cup) crumbled reduced-fat blue cheese
6 tablespoons light balsamic vinaigrette or light honey mustard dressing (I used Newman’s Own Light Balsamic)
1 pound grilled boneless, skinless chicken breast strips or shredded rotisserie chicken

Add the greens, grapes, walnuts, and cheese to a large glass or plastic mixing bowl. Add the dressing and toss well. Divide the salad among 4 serving plates and top each with 1/4 of the chicken. Serve immediately.

Makes 4 entree-sized servings. Each serving has: 329 calories, 34 g protein, 19 g carbohydrates, 13 g fat, 4 g saturated fat, 77 mg cholesterol, 3 g fiber, 738 mg sodium

Grape Skewers with Cheesecake Dip

96 red seedless grapes
16 6-to-8 inch skewers
1 recipe Cheesecake Dip (see below)

Skewer 6 grapes lengthwise onto each of the skewers so they touch. Spoon the dip into a medium, decorative bowl. Place the bowl in the center of a large serving plate or platter. Arrange the skewers around the bowl so they point outwards. Serve immediately.

Makes 16 servings. Each (1 skewer plus 1-1/2 tablespoons dip) serving has: 66 calories, 2 g protein, 10 g carbohydrates, 3 g fat, 2 g saturated fat, 8 mg cholesterol, trace fiber, 43 mg sodium

For the Cheesecake Dip:

8 ounces reduced-fat cream cheese, at room temperature
1/4 cup sugar
1 tablespoon fat-free vanilla yogurt
1/2 teaspoon vanilla extract

Add the cream cheese and sugar to a medium mixing bowl. Using an electric mixer fitted with beaters, beat the cream cheese and sugar until well combined. Add the yogurt and vanilla and mix on low until just combined.

Makes 16 servings. Each (about 1-1/2 tablespoon) serving has: 46 calories, 2 g protein, 4 g carbohydrates, 2 g fat, 2 g saturated fat, 8 mg cholesterol, 0 g fiber, 43 mg sodium

Grape Mojito

12 mint leaves
1 tablespoon freshly squeezed lime juice
12 black California grapes
1/2 tablespoon light agave nectar
1-1/2 ounces light rum
2 ounces soda water
Garnish with additional grapes

Add the mint leaves and lime juice to sturdy glass. Using a muddler, crush the mint leaves to release the juice from the mint. Add the grapes and use the muddler to crush them. Stir in the agave, rum and water. Fill the glass with crushed ice.

Makes 1 serving.
