Access Hollywood Live: Kerry Simon’s St. Patrick’s Day Pistachio Pancakes

Chef Kerry Simon of Simon Restaurant at Palms Place in Las Vegas stops by the set of Access Hollywood Live on March 16, 2011 to show off some fun food fare for St. Patrick’s Day.

Here is his recipe for Pistachio Pancakes:

St. Paddy’s Day Pistachio Pancakes

Ingredients:
1 cup whole wheat flour
1 tablespoon common granulated sugar
2 teaspoons baking powder
1/4 teaspoon salt
1 egg
1 cup milk
3 tablespoons pistachio paste
2 tablespoons oil
additional oil for frying

How to:
In a large mixing bowl combine the whole wheat, add sugar, baking powder, salt & mix well. In a separate bowl beat the egg, milk, pistachio paste, oil and stir till smooth.

Now add the wet ingredients to the dry ingredients, and stir until thoroughly moistened.

Allow the pancake batter to rest at room temp for 10 minutes.

Heat a large frying pan or griddle over medium high heat and coat with a bit of vegetable oil. Using a ladle, dollop about a ¼ cup of the batter onto the griddle or pan, to form the pancakes.

Cook until the pancakes begin to develop a lot of bubble one the top side before flipping over.

Cook another 2 minutes until golden brown. Set aside and continue to cook remaining pancakes.

Possible toppings may include maple syrup, whipped cream, or crushed pistachio pieces.
