Kevin’s Yummy-Tummy Chocolate Chip Cookies

Preheat oven to 380 degrees. Makes two batches

4 oz Organic Smart Balance (whipped buttery spread), room tempered
1 cup Date Sugar
1 tbsp Vanilla Extract
1 Egg substitute
1 1/2 cup Spelt Flour
1 tsp Sodium Free Baking Powder
1/2 cup Dark Chocolate Chips
1/2 cup Crushed Nuts (walnuts or pecans works great)

All ingredients are organic.

Mix the soft butter substitute with the date sugar in a mixer for about 3 minutes. Add the vanilla and the egg substitute, mix it in thoroughly. Add the spelt flour and the sodium free baking powder, mix it well, then add the chocolate chips and crushed nuts. Make sure they are well mixed in so each cookie gets both chocolate chips and nuts.

Use approximately 1 tbsp dough for each cookie. Roll the dough in your hands a little, then flatten it slightly and put on the cookie pan.

Bake for 8 minutes in an oven that is pre heated to 380 degrees.

Let the cookies cool down a bit before trying them, or you can get burned by the melted chocolate chips.

Enjoy with organic soy milk.
