Access Hollywood Live: Nadia G’s Rockin’ Holiday Buffet Recipe

Bad girl chef Nadia G make good in the kitchen during the holidays. Cooking Channel’s “Bitchin’ Kitchin’” host dropped by Access Hollywood Live to show Billy & Kit how to put together a rockin’ holiday buffet.

She reveals a buffet is the way to go for holiday hosts who want to spend time in the party zone not in the kitchen. Here’s her recipe for Saltimbocca Veal Cutlet Sliders with Sage Mayo.

Ingredients:
4 veal cutlets
3 eggs, beaten
1 cup Italian seasoned breadcrumbs
1/4 cup canola oil
4 slices prosciutto di Parma
1/2 cup mayonnaise
3 sweet gherkins, minced
1 tbsp. sage
4 kaiser rolls, halved and toasted
10 fresh baby romaine leaves

Using a meat mallet, pound the veal cutlets to 1/4 inch thick. Then dip the veal cutlets in the beaten eggs, and coat them with breadcrumbs. In a large frying pan, heat the canola oil, and fry the cutlets for 2 to 3 minutes per side, until golden cripsy, and cooked through. Drain the cutlets on paper towels. Add the prosciutto slices to the pan, and fry for about 1 minute, until very cripsy. Drain the cripsy prosciutto on paper towels.

In a small bowl mix the mayonnasie with the sweet gherkins and sage. Slather each mini kaiser roll with sage mayo, add a piece of cutlet, slice of crispy prosciutto, and top if off with romaine leaf.
