Healthy Hollywood: Fab Food Friday – Miss Universe’s Miracle Diet!

Olivia Culpo was judged the most beautiful women in the world! Healthy Hollywood got a chance to meet and check out this brunette stunner the other day when she was on Access Hollywood Live.

And, just like a catty gal, I tried to detect a flaw, yet she’s pretty much a perfect beauty.

Big sigh!

So, Healthy Hollywood stumbled upon the next best thing: the secret to her knockout figure. It is nutritionist Tanya Zuckerbrot, who shares her slim-down tips in The Miracle Carb Diet.

According to Tanya, fiber is the miracle carb that makes calories and fat disappear. The right carbs – those that are packed with dietary fiber – have digestive properties that encourage weight loss.

Unfortunately, most of us don’t get enough fiber in our diet. The Miracle Carb Diet is packed with tips, food suggestions and recipes to help folks get more of the right stuff in their meal plan.

Tanya shared with Healthy Hollywood her recipe for shrimp scampi.

SHRIMP SCAMPI WITH WHOLE WHEAT PASTA:

(serves 4)

Shrimp is one of my favorite proteins to cook with, because it’s low in calories and is ready in a snap. While a typical Shrimp Scampi is basically drowned in butter, I’ve changed this recipe to make it a heart healthy and low calorie dish.

Ingredients:

1 tsp. olive oil

3/4 lb. whole wheat pasta

4 cloves garlic, minced

16 jump shrimp, peeled & deveined

1 tsp. salt

1/4 tsp. pepper

1/3 cup chopped parsley

Lemon zest

1/4 cup lemon juice

1/8 tsp. hot red pepper flakes

In a large pot of boiling salted water, add I tbsp. salt and the linguine, and cook for 7 to 10 minutes.

Meanwhile, in another large, heavy-bottomed pan, simmer olive oil over medium-low heat. Add the garlic. Saute for 1 minute. Add shrimp, salt and the pepper, and sauté until shrimp have just turned pink, about 5 minutes, stirring often.

Remove from heat, add the parsley, lemon zest, lemon juice, and red pepper flakes. Toss to combine.
