Healthy Hollywood: Fab Food Friday – Warm Garbanzo Salad!

Looking for something a little different to serve at your next picnic or BBQ? The folks over at the Aroma Espresso Bar in New York City shared with Healthy Hollywood one of their favorite summer salads. It’s simple to make and it doesn’t require any time near a hot stove. Celebrities, like Matthew Perry and Chelsea Clinton, are all fans of the restaurant’s fresh and seasonal menu.

Warm Garbanzo Salad:

(serves 1)

Ingredients

I cup Garbanzo beans

1 hard-boiled egg

2 tomatoes

3 cucumbers

.25 cup chopped red onions

tahini sauce (recipe below)

croutons

chopped parsley

Tahini Sauce (recipe can be adjusted to number of salad servings)

(can make up to 40 servings)

32 oz. ground tahini

4 oz. lemon juice

1 tbsp. garlic

1 tbsp. cumin

Salt ‘n water

Mix all ingredients together, until desired thickness is reached.

For the salad:

Cut the cucumbers and the tomatoes into little chunks and add into mixing bowl. Then add the chopped onion, garbanzo beans (preferably warm ones) and croutons and put into serving bowl. Add two spoons of the tahini sauce to the center of the bowl. Grate the hard-boiled egg over the tahini and salad. Add chopped parsley as decoration. As an option, drizzle salad with a lemon olive oil dressing.
