Josie Maran’s Healthy Moroccan Salad Recipe

Model and expectant mom Josie Maran is a model of healthy living. She started her own signature natural cosmetic line and dishes on how to be a chicological mom on her website’s blog, which is packed with eco-friendly living tips.

Josie stopped by Access Hollywood Live to share one of favorite healthy go-to dishes – a Moroccan salad.

Ingredients:

1 chopped cucumber

1/2 chopped red onion

2 – 3 tomatoes, chopped

1/3 cup cilantro, chopped

2 tbsp. argan oil

2 tbsp. vinegar

Juice of 1/2 lemon, fresh squeezed

Feta cheese (optional)

Chop cucumber, onion, tomatoes and cilantro. Mix all the ingredients (except lemon juice and feta) in large bowl. Then squeeze lemon juice over the top of salad and toss. Sprinkle feta cheese to taste. Refrigerate. Serve inside pita bread with Moroccan Kebabs or as a side salad.
