Lisa Leake’s ‘100 Days Of Real Food’ Recipes

As parents, we all strive to feeds our kids healthy foods. Mother of two, Lisa Leake, challenged her family to cut out processed food for 100 days. Her families’ journey inspired a blog and the book, “100 Days Of Real Food.” Lisa stopped by Access Hollywood Live to share some of her simple and accessible food recipes.

Basic Cheese Sauce

This creamy cheese sauce is a great way to top off vegetables or even use for a quick “macaroni and cheese” dish. Let’s face it: My “pickier” daughter
eats twice as much broccoli if it’s covered in cheese sauce! You could even get creative and add some chiles and diced tomatoes to transform this recipe into a queso dip. I realize this cheese sauce will not be the same bright orange as store-bought “processed cheese products,” but the orange color is added only for aesthetic purposes and often comes from a natural additive called annatto (or sometimes from artificial food coloring, so don’t forget to read your labels).

  • Makes about 1 cup sauce
  • 2 tablespoons butter
  • 2 tablespoons whole-wheat flour
  • 3⁄4 cup whole milk
  • 1 1⁄2 cups shredded sharp cheddar cheese (or a combination of different cheeses that you have on hand)
  • 1 tablespoon cream cheese
  • 1⁄4 teaspoon salt

1. Melt the butter in a medium sauté pan over medium-low heat. Whisk in the flour, working vigorously to prevent lumps, until the mixture (which is called a roux) darkens a little but does not burn, 1 to 2 minutes.

2. Pour in the milk and continue whisking to break up any lumps. When the milk thickens to the consistency of thin gravy, 2 to 3 minutes, turn off the heat and stir in the cheeses and salt. The cheeses will melt beautifully into the sauce. Serve warm over veggies and/or noodles.

LISA’S TIP: Leftover sauce can be stored in the fridge for 2 to 3 days. When reheating, stir in a little milk to bring it back to the right consistency.

Green Eggs

Ingredients:

  • 6 eggs
  • 1 tbsp. milk
  • 2 tbsp. onion
  • 1 cup fresh kale or spinach

In a blender combine ingredient and puree until smooth. Melt some butter in a skillet over medium-low heat and cook the egg mixture until it’s done to your liking. This dish is good with a little cheese sprinkled on top.
