Mary Jo Eustace’s Gluten-Free Recipes

Mary Jo Eustace is one busy lady. And on Monday, Mary Jo (Dean McDermott’s ex-wife) stopped by Access Hollywood Live, where she shared two of favorite gluten-free recipes from her fourth cookbook, “Scared Wheatless.”

Mexicali Quinoa

  • 1 cup gluten-free corn tortillas, cut into strips
  • 4 cups cooked red quinoa
  • 1/2 cup finely diced red onion
  • 2 cups diced avocado
  • 1 1/2 cups black beans,
  • 1 cup corn,
  • 3/4 cup fresh coriander, chopped

Dressing:

  • 1 lime, juiced
  • 1 1/2 Tbsp honey
  • 1 tsp Dijon mustard
  • 1/4 cup olive oil

Fry the corn tortilla strips in vegetable oil until crisp. Set aside. Cook the quinoa according to the instructions on the package. In a large mixing bowl, combine quinoa, onion, avocado, black beans, corn, and fresh coriander. In a small bowl, whisk together lime juice, honey, mustard, and olive oil. Salt and pepper to taste.

Kale Magic

  • 4 cups kale, julienned
  • olive oil
  • 1/2 lemon, juiced
  • 2 avocados, diced
  • 1 cup cooked quinoa
  • 1/2 cup pistachios
  • Salt and pepper to taste

In a large bowl, toss the kale with a little olive oil and the lemon juice to soften the kale. Add the avocado, quinoa, and toss again. Finish off with a little more olive oil, the nuts, and salt and pepper to taste.

Why not try…

Adding a couple of cups of cooked broccoli or brown rice instead of quinoa? To amp it up, add a clove of minced garlic. Throw in a couple of cups of shredded chicken and you are in protein city. Experiment.
