Aunt Johnnie’s Mae Pie In The Jar

Peach Pie Filling:

  • 4 cups of sliced and peeled peaches (you can also use can peaches in heavy syrup outside of peach season)
  • 1/2 cup of sugar
  • 1 tablespoon of butter
  • 1/4 teaspoon of cinnamon
  • 1 tablespoon of flour (add more for thicker consistency)
  • 1 teaspoon of vanilla extract

Homemade Crust:

  • 1 1/2 cup of all-purpose flour
  • 1/2 teaspoon of salt
  • 1/2 cup of cold unsalted butter
  • 2 tablespoons of ice cold water

Other items needed:

  • Wide mouth mason jar (any size)
  • Pan spray
  • Cookie sheet pan
  • pizza cutter or knife

Pie filling Directions:
Combine all ingredients in a sauce pan on high heat and cook until it begins to simmer. Do not allow it to boil. Once the ingredients begin to simmer turn heat to low and allow it to cook until the apples are soft enough to cut in half with a spoon. Then let cool and thicken. Filling should stick to the back of a spoon.

Crust and Baking Directions:
While the apples are simmering, start on your crust. You may use our made from scratch recipe or use premade dough from the refrigerated section at your local grocery store.

In an electric mixing bowl add the flour and salt. Next, in pieces add cold butter with a fork, not all at once, and begin to mix until incorporated. Last add the ice cold water. Once all the ingredients have been added take out the mixture and kneed into a ball with your hands, wrap in clear plastic wrap and allow the dough to rest for a minimum of 30 minutes. After the dough has rested, roll it out on a clean flat surface. You may use flour on the surface to keep the dough from sticking.

Use the lid of the jar to cut out your circle to place the dough in the bottom of the mason jar. Cut out the pieces you need to cover the sides of the inside of the jar. Place enough inside so that the dough hangs over the sides of the jar for shrinkage while baking. Pour in your cooled apple pie filling approximately a 1/4 inch from the top of the jar. Cover the top of the jar with the remaining dough, brush the top with melted butter and bake on a cookie sheet at 350 degrees for 30 minutes or until crust is golden brown.

After baking remove and allow to cool, then enjoy!

This recipe will yield four to 12 pies in a jar depending on the size jar used.
