The Busy Mom’s Cookbook: Chef Antonia Lofaso’s Recipes (Access Hollywood Live)

Figuring out what to make for dinner is never an easy task – especially for busy moms and dads!

“Top Chef” alum and restaurant owner Antonia Lofaso visited Access Hollywood Live with some great recipes from her new book, “The Busy Mom’s Cookbook,” to offer up some inexpensive and time-saving dishes sure to please the whole family!

Tex-Mex Turkey Chili

  • 1/4 cup vegetable oil
  • 1 pound ground turkey
  • 1 tablespoon salt
  • 1 small red bell pepper
  • 1 small green bell pepper
  • 1 small yellow onion
  • 1 teaspoon crushed chipotle pepper
  • 2 tablespoons coriander
  • 2 tablespoon ground cumin
  • 1 teaspoon smoked paprika
  • 1 (28-ounce) can crushed tomatoes
  • 1/4 cup molasses
  • 1/4 cup apple cider vinegar
  • 1/4 light brown sugar
  • 1 1/2 cups chicken stock
  • 1 (15.5-ounce) can black beans
  • 15 ounces of corn

Honey Corn Cakes

  • 1 1/2 cups flour
  • 1/2 cup cornmeal
  • 1/3 cup sugar
  • 1 tablespoon baking powder
  • 1 teaspoon salt
  • 1 1/4 cups buttermilk
  • 2 large eggs
  • 1/3 cup vegetable oil
  • 6 tablespoons melted butter
  • 1 (11-ounce) can of corn
  • Nonstick vegetable spray
  • 1/3 cup honey

Caramel-Almond Popcorn

  • 1 cup light brown sugar
  • 1/4 cup light corn syrup
  • 1 tablespoon salt
  • 1 cup heavy cream
  • 1/2 teaspoon vanilla extract
  • 1/4 teaspoon baking soda
  • 8 cups popped popcorn
  • 2 cups raw whole almonds
