Quinoa & Turkey Stuffed Peppers

  • 3 red peppers
  • Olive oil
  • 1/2 cup quinoa
  • 1 cup chicken stock
  • 1 pound of ground turkey
  • 1 tsp ground cumin
  • 1 small zucchini
  • 1 16 oz jar tomatillo salsa
  • 2 scallions, thinly sliced
  • 1/2 bunch cilantro
  • Salt
  • 1 15 oz can of black beans, drained
  • Low-fat pepper jack cheese
  • 2 avocadoes
  • 2 Limes
