Patina Catering’s Executive Chef Alec Lestr and pastry chef Carlos Enriquez visit Access Hollywood Live to preview what the Emmy winners and guests will be eating. Well we are one week away from the prime time Emmy NBC Monday August 25th at 8:00 P.M. . As we mention you are hosting the live Emmy pre-show. Yes we are. Guys, 200 chefs will be joining you all together to serve. 215 chefs in the kitchen. How many waiters is that. If you have 215 chefs how many waiters do you have. Army. Anyone available. 700. So what we are eating at the Emmy or the people actually go in. I'll not be going in. Look at this. I have heard about groomed fruit. We have a grilled peach and tomato salad with fig and mozzarella and almond. Is that what the plate will look like. Exactly how it will look. Healthy and light. Clean. Clean is the way to go. Yes. For the main dish we have a little fillet of beef. With a potato bone. That is a potato that we have carved into the shape of a bone and fill up with golden potato puree and the grape and cotton candy grape. Let's turn the bone around. Where is the bone. Look at that also side shot right there. Is that kale a little appearance. The kale chip and red wine sauce. Do people get the meat done a certain way. Get it one way that's it. Dessert we are serving is chocolate smor but we do one you can make at home. That's correct. The we are doing A.I. Show you the s'more cup cake. Find the recipe on line as well. So for the cup cake you put the cry ingredient in the bowl. Whip them together to combine. Oreo cookie. We have some flour sugar and smoke the flour to get the campfire smell. You combine all the dry ingredient. Mix it for about 3 minutes in a bowl or use electric mixer. Once all combined you put them in a little pastry bag. That is a big pastry bag Carlos. Go big or go out, right? Once it's all mixed. A little graham cracker on the bottom. Graham cracker. In the middle too. Might as well. That's good one. I should have done that. Layer it.
