Nutritioolyn o'neil is with us, a healthier take on southern food favorites. The south really does get a bad rap. We do! I wrote this book with "Southern live ingliving," the first healthy southern healthy cookbooks. Healthy and southern? You bet your biscuits. Do you say that? Better than the other. Think about it. The south, you're from Atlanta. This is where the farms are in the south, the farmer's markets. It's not just fried chicken and macaroni and cheese, even though we do have that. It's pecans. Grits Rand and greens and peaches and okra. Just a beautiful bounty of the south. Now, on the cover of the book you can see there is a piece of fried chicken. How do you make a healthy fry ed chicken, Caroline? In the southern living test kitchens, this kitchen is 40% lower in fat than a classic fried chicken you get at a fast food place I won't name and it just as crunchy, delicious. I don't know if you want to just bite into one. I do have napkins. You may want to take a little piece. Oh, my gosh! That is the size of a boat. I'm a drumstick guy. You know what's good about it? The skin. There is no skin. That's the secret. And we lowered the saturated fat what's crispy in there is whole wheat flour, ginger and paprika for the spices. You get the crunch but not the calories. That's good. It lowers the saturated fat, too, because as a registered dietitian we want you to be happy and healthy. Pecan slaw. We have napa cabbage. Scallions. Radishes. Apple slices. Crunchy and of course the pecans. Now, the dressing is sweet and spicy. We have lemon juice, honey. Why the sweet comes from. We have hot sauce, why with the spice comes from. I like it spicy. And black pepper, want a little more spice, little canola oil, heart healthy fat. Celery salt, little different zipty do Diaw. If you want to do just do the honors. I will do that. Kit you want a little? It is about portion control, too. We'll get into that.
