Yields 10 push-up pops
Ingredients:
5 large eggs, separated 1 (14-ounce) can sweetened condensed milk 1 tablespoon lime zest 1/2 cup fresh lime juice 1 1/2 cups graham cracker crumbs 2 tablespoons sugar 4 tablespoons butter, melted whipped cream topping
Preheat oven to 325 degrees. Combine the egg yolks, condensed milk, lime zest and lime juice in a heavy saucepan. Cook over low heat, stirring constantly until the mixture thickens or boils (about 10 minutes). Pour into a greased pie pan.
Bake at 325 degrees for 25 minutes. Let cool. For the crust, combine the graham cracker crumbs, sugar and butter. Mix until well blended. Start by pressing 1-2 tablespoons of crumb mixture into the bottom of the push-up pop. Fill cooled key lime pie mixture into large plastic bag and snip corner. Pipe swirl of key lime pie onto graham cracker layer in push-up pop. Repeat until full. Top with whipped cream topping and garnish with a slice of lime. Refrigerate until ready to serve.
