New Year, New You: Cheesecake Factory Reveals New 'Skinnylicious' Menu

Today on Access Hollywood Live’s “New Year, New You” series, Cheesecake Factory’s Chief Culinary Officer, Donald Moore, visits with some healthy eating options from the Cheesecake Factory’s “Skinnylicious” menu to star the year off right. Plus, Donald shows Kit Hoover how to make “Skinnylicious” White Chicken Chili .

Healthy food decisions coming up. In and out you can rack up your calories. We are here ING tips from the cheesecake factory skinny-licious menu. Tell me about it. For a long time there's this misperception to eat healthy, you can't have delicious or satisfying food. We've shown you can. You have have delicious food and till watch your calories. That's what we've done. There's still something for everybody. Bring is the whole family there. We've been doing this for years. Anybody can find anything. There's no veto vote. The kids menu is spectacular. You can get something for everybody. I could name everything on the menu for the kids menu. I love you show the calorie count on there and the portion size. What are we starting with? This is a new dish. We're about to roll this out across the country. Steak medallions. Cherrymatoes and mashed potatoes. All under 490 calories. This is our Mexican tortilla salad. It looks big. People thought if you're watching calories you can't have a lot. If you watch the ingredients. What's in there? Greens, chicken, beans, avocado, little tortilla, sauce on the outside and a light dressing. The presentation is so good. Bring it up high with something on top there. What are we making today? Today we're making the white chicken chili. It's one of my favorites. It's wintertime out, it's cold. People are counting kal Rees. Football's on. They want something that's satisfying but they don't want to overdo it with their new year's resolution. We start by browning a bit of chicken. This is crusted. You can smell it. It's in salt and pepper. Then I'm going to turn this stove up just a bit. Then we're going to have a bit of butter and olive oil. You've got little bit on the bottom of the pan which are going to help with the flavor. Then we'll saute some onions we cut fresh in the restaurant every day. We're going to sweat those out a bit. Then we'll add some poblano chilies they have a good warm chili flavor. The more flavor they have the darker they are. I love that. We're going to sweat these. And then cook them. Add a little bit of flour because you need to thicken it. Any time adding flour, you want to cook the flour out. Then the butter and the flour come together to make a rue. Then if you could help me, this is chicken broth. Pour a little bit. After the flour cooks out, you're going to add a little chicken broth. You'll add a bit at a time and make sure there's no lumps and really start to thicken this. A little more. Should we be sharing our secret recipes? We want our guests to love our food. We roast at the restaurant. They're like a Mexican green tomato. Delicious. We add some cilantro and herbs. Then some cumin, oregano. And some brown sugar. You have to have it in there. Then we'll bring this to a boil. Is this what it looks like? This is the finished product here. Sourchili. This looks spectacular. I'm a big fan. Thanks for coming in right now.
