Teresa stopped by Access Hollywood Live to share a few recipes from her new cookbook, “Fabulicious! Fast & Fit.”
Shrimp Salad with Diablo Dressing
2 garlic cloves, crushed under the flat side of a chef’s knife and peeled
1/2 teaspoon of salt
2 tablespoons red wine vinegar
2 tablespoons extra-virgin olive oil
1 tablespoon freshly squeezed lemon juice
1/2 teaspoon dried oregano
1/2 teaspoon red pepper flakes
1 (5 ounce) container mixed with salad greens
2 ripe plum (Roma) tomatoes, cut into 1/2 inch chunks
1 pound chilled cooked, peeled and deveined shrimp
1. To make the dressing, chop the garlic cloves on a cutting board. Sprinkle with the salt,
2. And smear the garlic on the board to make a rough paste. Transfer to a jar. Add 3 tablespoons
3. Water, the vinegar, oil, lemon juice, oregano, and red pepper flakes to the jar. Secure the lid on the jar and shake well to combine.
4. Spread the salad greens on a serving platter and add the tomatoes. Mix the shrimp with the dressing. Using a slotted spoon, heap the shrimp on top of the salad and drizzle the dressing Over all. Serve immediately.
