Back-to-School Goldfish Goodness Bars

 Ingredients:

  • 1/2 cup slivered almonds
  • 1/2 cup unsalted pumpkin seeds
  • 1/4 cup sunflower seeds
  • 1/2 cup dried cherries, loosely chopped
  • 3 Tablespoons unsalted butter
  • 2 cups old fashioned rolled oats (don’t use instant or quick cooking)
  • 2 cups Pepperidge Farm Goldfish of your choice, great combo is 1 cup honey graham, 1 cup pretzel
  • 2 teaspoons McCormick cinnamon
  • 1/2 teaspoon McCormick ginger
  • 1/4 teaspoon salt
  • 1/2 cup honey
  • 1/2 cup almond butter
  • 1/8 cup water
  • 1 teaspoon McCormick pure vanilla extract
  • 1/2 teaspoon baking soda

Directions:

  1. Preheat oven to 325 degrees Fahrenheit.
  2. Line a 13″ x 9″ baking pan with parchment paper, cut large enough to hangs off the edges.
  3. Toast almonds, pumpkin seeds, sunflower seeds in a skillet for about 4 minutes, mixing frequently, until the pumpkin seeds start making popping sounds. Transfer into a large bowl and set aside to cool.
  4. Use the same skillet (all nuts removed) and on medium heat, add the butter to pan. Once melted, add the oats and cook until golden for about 5 minutes, stirring frequently.  Add the toasted oats to the bowl with the seeds and nuts. Add the cinnamon and ginger and mix.
  5. Add the Goldfish and dried cherries and mix to integrate all the dry ingredients.
  6. Pour honey and salt into a sauce pan, add water and stir. Heat over medium heat until the honey and water are warm. Add the almond butter and vanilla and continue to heat, stirring constantly for about 2 minutes until it forms a thick syrup.  Remove from the heat and sprinkle in the baking soda and stir quickly for about 10 seconds. You will see it foam a bit.
  7. Pour the hot syrup over the oat and nut mixture and stir with a wooden spoon until thoroughly combined. Transfer onto the prepared pan, and press as firmly as possible into one even layer using an extra piece of parchment paper on top of the mixture.
  8. Bake for 15 minutes at 325 degrees Fahrenheit. Remove and let cool completely at room temperature for 45 minutes or more before slicing into bars approximately 3″ x 1.5″.
