When it comes to hotspot dining in Miami, it’s hard to beat Catch Miami.
The restaurant has only been open a month and the likes of Jennifer Lopez, Cameron Diaz & more have already enjoyed the cuisine.
Catch Miami’s executive pastry chef Thiago Silva joined Billy Bush and Kit Hoover on Access Hollywood Live to share one of the restaurant’s tasty dessert recipes!
KEY LIME DONUT RECIPE
Donut Dough:
1 kl – All purpose Flour
500grms – Eggs
130grms – milk
120grms – sugar
23grms – yeast
25grms – salt
375grms – butter (cold cubed)
Place flour, yeast in a mixer with hook attachment. While on low speed add eggs, milk, followed by sugar and salt. Once mix comes together add butter. Beat on medium high speed until gluten is developed. Knead into a ball, cover with plastic and let it sit at room temp for 30 mins. After 30 mins flatten dough and roll to about 1/2” in thickness. Cut into 3″x3” squares. Leave them covered and outside, when they double in size they are ready to be fried. Fry at 340F until golden brown.
Key Lime Curd:
9 – yolks
3- eggs
1/4 cup -sugar
2 T – honey
4 – lime zest
1 cup – key lime juice
1 can condensed milk
Add all ingredients to a stainless still bowl, in the order that they are mentioned while whisking. Place over a double boiler, and cook until thickened. Let cool over night.
Donut Glaze:
1 lb – powdered sugar
1/4 cup – water
1 Tbl – key lime juice
Add sugar to bowl, add water and juice while whisking. Whisk until smooth. Glaze donuts
