Dukan Diet Recipes: Slim Down With High-Protein/Low-Carb Foods!

The world stopped in awe as Kate Middleton walked down the aisle at her Royal Wedding. The princess bride, along with sister Pippa and mother Carol, all looked absolutely breathtaking – thanks, in part, to the high protein-low carb Dukan diet.

Now, Dr. Dukan has released the Dukan Diet Cookbook and the weight loss master stopped by Access Hollywood live to offer up the skinny on three of his most popular dishes!

Dukan Oat Bran Galette

(makes 1 galette)

This light pancake is tasty way to eat your oat bran

Ingredients:

2 tbs. oat bran

2 tbs. fat-free plain Greek-style yogurt

1 tsp. zero-calorie sweetener, such as Splenda… or…

Freshly ground black pepper, fresh herbs, and/or chopped garlic

1 egg white

In medium bowl, combine the oat bran and yogurt with the sweetner for a sweet pancake, or with pepper, herbs and/or garlic for a savory pancake.

In a separate bowl, beat the egg while until foamy. Fold the beaten egg white into oat bran mixture until blended. Heat a small pan over medium heat. Pour the mixture into the hot pan and cook until the underside is golden and the upper side starts to dry, about 3 minutes. Use spatula, flip the galette and continue cooking the other side until browned.

Tuna & Red Snapper Tartare

(makes 6 servings)

Ingredients:

14 oz. Ahi tuna steaks

14 oz. skinless red snapper fillets

1 tbs tarragon vinegar

3 tbs. fresh lime juice

1 chopped shallot

3 tbs. chopped fresh dill

6 tsp. salmon roe

1 tsp. crushed pink peppercorns

1 tsp. ground dill seeds

Line six 3/4-cup ramekin with plastic wrap. Finely chop the tuna and the red snapper. Place the fish in large bowl and toss with vinegar and lime juice. Season mixture with salt and pepper, and add shallots and fresh dill. Spoon the mixture equally into the prepared ramekins, pressing it down into dishes. Cover and refrigerate 15 minutes. Turn each ramekin out onto a dish and remove the plastic wrap.

Garnish each portion with a spoonful of salmon roe, and sprinkle with pink peppercorn and dill seeds.

Salmon on a Bed of Leeks

(makes 2 to 3 servings)

Ingredients:

4 tbs. chopped shallots

1 lb. 2 ozs, leeks (white parts only), chopped

3 drops of vegetable oil

1 lb 4ozs. salmon fillets, divided into 4 portions

1 tbs. chopped fresh dill

Place the shallots, leeks, and 3 tbs. of water in heavy-bottomed skillet and cook over low heat for 20 mins. Season with salt & pepper, turn off the heat, keep warm.

Heat a nonstick frying pan over medium heat. Add the oil, and place the fish in the pan with skin side down.

Cook until the flesh turns light pink. Depending on thickness, this will take between 2 to 5 minutes.

Flip the salmon and cook for an additional 2 to 5 minutes. To serve, place the leeks on a large serving plate and top with salmon
and chopped dill.
