Healthy Hollywood: Derek Jeter’s Sweet Treat

New York Yankees legend Derek Jerek retired his cleats. But, “The Captain’s” legacy lives on in New York City, in a variety of ways.

Baseball fans (and the ladies) will certainly miss seeing the shortstop sensation in action. But, you can still get a little taste of Jeter at the NYY Steak Manhattan eatery.

The steakhouse created a frozen PB & J recipe in his honor. And, the restaurant shared their recipe with Healthy Hollywood. Hey, even the healthy-conscious deserve a little treat once in a while.

Frozen PB & J

(serves 1)

  • 10 oz. Peanut Butter Gelato
  • 1 oz. Strawberry sauce (see below recipe)
  • 2 oz. chopped peanuts
  • 1 sprig of mint
  • Whipped cream

Place 2 scoops of gelato into single serving bowl. Spoon strawberry sauce over and sprinkle with chopped peanuts. Top with a dollop of your favorite whipped cream and garnish with a sprig of mint.

Strawberry Sauce

  • 1 cup strawberries
  • 1/2 cup sugar
  • 1/2 cup water
  • Juice of 1/2 lemon
  • 1/2 tsp. vanilla extract

Spilt the strawberries in half, slice 1/2 cup of strawberries evenly and set aside. Make a simple syrup by combing the water and sugar in a saucepan on the stove, bring it to a boil while stirring until the sugar dissolves and a golden color is achieved.

Turn down the heat, add whole strawberries and cook until soft, then puree with a hand mixer. Once the berries are cooked and pureed, mix into the sliced strawberries, lemon juice and vanilla extract. Remove from heat and place in a freezer for 15 to 20 minutes until cool. Drizzle over the gelato.
