Healthy Hollywood: Fab Food Friday – Lighten Up Your Super Bowl Feast!

Whether you’re rooting for the Ravens or the 49ers, count on it being a game day gut-buster.

Besides Thanksgiving, the Super Bowl is the biggest calorie fest. Who can resist the chicken wings, the guacamole, the pizza, the potato skins and, of course, the beer? The average American will pack away a day’s worth of calories watching the game.

A yummy but major fat bomb are the chicken wings. The National Chicken Council predicts 1.23 billion wings will be eaten on game day. And, most wing recipes aren’t on the skinny side.

“Hungry Girl” author Lisa Lillien has teamed up with Tyson’s Grilled & Ready to come up with a recipe for a guilt-free take on wings.

Lisa’s chicken alternative is a Buffalo Chicken Parfaits. Besides being high on the taste factor, there are no napkins required. Now, that’s a party touch-down for any host.

BUFFALO CHICKEN PARFAIT

Ingredients:

3 ounces Tyson Grilled & Ready Diced Chicken Breast

3 tbsp. fat-free plain Greek yogurt

1/4 tsp. ranch dressing

1/2 cup shredded lettuce

1 tbsp. crumbled blue cheese

2 tsp. Buffalo-style hot sauce

1/4 cup diced carrots

1/4 cup diced celery

Mix yogurt with ranch dressing in a medium bowl. Stir in lettuce and blue cheese. In another bowl, coat chicken with hot sauce. In a tall glass, layer half of each ingredient: lettuce mixture, carrots, celery, and saucy chicken. Repeat layering with remaining ingredients. Make one for each guest. Each serving is 185 calories.
