Healthy Hollywood: Fab Food Friday – ‘True Blood’ Bites!

Just in time for your Halloween spook fest, bite into vampire-inspired dishes. HBO’s “True Blood” is out with its own cookbook, “True Blood: Eats, Drinks, and Bites from Bon Temps” — it’s packed with 85 sexy vampire recipes.

As “True Blood” fans know, food plays a major role on the hit show. “True Blood” creator Alan Ball, along with Bayou chef Marcelle Bienvenu, put together this collection of down-home Southern recipes.

Healthy Hollywood has a few recipes to share.

Crawfish Dip:

(makes 3 cups)

Ingredients:

1/2 cup unsalted butter

1 cup chopped onion

1/2 cup chopped green pepper

1 tsp. minced garlic

3 tbsp. minced parsley

1 lb. peeled crawfish tails

1 8-oz. pkg. cream cheese

Melt the butter in skillet. Add the onion and bell pepper and cook, stirring until the vegetables are soft. Add the garlic, parsley, and crawfish tails. Cook, stirring, until the crawfish throw off some of their moisture, 3 to 4 minutes. Add the cream cheese and reduce heat to medium-low. Cook, stirring, until the mixture is smooth and heated through. Season with salt, cayenne, and Tabasco. Serve hot with crackers or toast points.

Beautifully Broken Bisque:

(serves 4 to 6)

Ingredients:

2 tbsp. olive oil

1 cup minced onion

3 to 4 medium beets, peeled and diced

1/2 cup chopped carrots

4 cups chicken broth

1 cup water

1 tbsp. lemon juice

1 tsp. salt

1 tsp. pepper

Heat the olive oil in a large saucepan over medium-heat. Add the onion and cook, stirring, until softened. Add the beets and carrots and cook, stirring, for 5 minutes. Add the broth, water, lemon juice, salt and pepper. Bring to a boil, reduce the heat to medium-low, cover, and simmer until the best are very tender, 20 to 30 minutes. Remove from heat and let cool slightly. Using an immersion blender, blend until pureed. Serve warm, garnishing each bowl with a spoonful of sour cream (optional).
