Healthy Hollywood: Jessica Alba’s Healthy Living

Jessica Alba is arguably one of the sexiest women on the planet! The “Sin City” sensation shows off her well-toned body in the upcoming sequel. But, this actress is a whole lot more than a sex symbol.

She’s got a lot of smarts and heart; especially when it comes to healthy living. She’s written a book on wellness and started up her own eco-friendly family product line, The Honest Company.

Now, this mother of two is joining forces with one of her favorite wellness drinks, ZICO coconut water. She’s a paid brand ambassador for their new “Crack Life Open” campaign, which is geared to helping people take of themselves.

“Anyone who follows me on Instagram or Twitter knows I’m a big believer in living honestly. I drink their natural coconut water as a simple way to stay healthy, but also because I’m on board with their ‘Crack Life Open’ mentality of living your best life by staying positive, being present and taking small steps towards balanced, healthy living that fit your lifestyle,” states Alba.

Jessica shared with Healthy Hollywood a few of her favorite recipes with coconut water…

Kale Salad & Summer Fruits

(serves 4 to 6)

  • 1 bunch Kale, washed with stems/ribs removed
  • 1 peach, sliced
  • 1 plum, sliced
  • 1/2 cup blackberries
  • 1/2 cup sliced almonds

Coconut Water Vinaigrette

  • 1/4 cup ZICO coconut water
  • 2 tbsp. fresh lemon juice
  • 2 tbsp. olive oil
  • 1 tsp. salt
  • 1/2 tsp. pepper

Combine all the ingredients except almonds and blackberries into a large bowl and “massage” kale with vinaigrette until leaves become soft and dark (about 2 minutes). Toss sliced fruit with dressed kale. Garnish with blackberries and sliced almonds.

Flourless Chocolate Cake

(serves 6 to 8)

  • 1/2 cup ZICO chocolate coconut water
  • 1 lb. bittersweet chocolate
  • 4 oz. unsalted butter
  • 6 eggs, separated
  • 3/4 cup sugar
  • Pinch of salt

Pre-heat oven to 375 degrees and grease 9-inch round cake pan. Melt chocolate, coconut water and butter over a double boiler or in your microwave, and let cool. In a medium bowl, combine egg yolks and sugar and whisk to a ribbon like consistency. Add chocolate mixture to yolk mixture. Whip egg whites and salt to a soft peak. Gently fold egg whites into chocolate mixture and pour the batter into prepared cake pan.
