‘Southern Living Country Music’s Greatest Eats’ Recipes

Allison DeMarcus — the host of CMT’s “Reel Eats” and wife of Jay DeMarcus from Rascal Flatts – is bringing some of country music’s favorite dishes right to your table!

Allison stopped by Access Hollywood Live to share some of the recipes from the “Southern Living Country Music’s Greatest Eats, presented by CMT” cookbook, where some of country music’s biggest names share some of their favorite recipes!

Miss Caron’s Pizza Casserole (Allison DeMarcus)

Total time: 1 hour, 5 min.

  • 1 lb. ground beef
  • 1/2 yellow onion, chopped
  • 8 oz. uncooked elbow macaroni
  • 2 (14-oz.) jars pizza sauce
  • 1 (3.5-oz.) package pepperoni slices
  • 1 (8-oz.) package shredded part-skim mozzarella cheese
  • Garnish: fresh oregano leaves

Preheat oven to 350F. Brown meat with onion in a large skillet over medium heat 7 to 8 minutes; drain and set aside. Prepare macaroni according to package directions. Stir pizza sauce and cooked macaroni into meat mixture. Spoon half of meat mixture into a lightly greased 13- x 9-inch baking dish. Top with half of pepperoni and half of shredded cheese; repeat layers. Bake at 350F for 25 to 30 minutes or until bubbly.

Grace’s Favorite Broccoli-Rice Casserole (Wynonna Judd)

Total time: 40 min.

  • 1 (16-oz.) pkg. frozen broccoli florets or spears
  • 1 lb. processed cheese, cubed
  • 1 (10 3/4 -oz.) can cream of chicken soup
  • 1 cup cooked white rice
  • 1 cup cooked brown rice
  • 1/2 cup milk
  • 1 Tbsp. Worcestershire sauce
  • Table salt
  • Freshly ground black pepper
  • 1 (6-oz.) can French fried onions

1. Preheat oven to 350F. Prepare broccoli according to package directions. Stir together broccoli and next 6 ingredients in a large bowl. Add salt and pepper to taste. Spoon broccoli mixture into a lightly greased 11- x 7-inch baking dish. Top with French fried onions.
2. Bake at 350F for 20 to 25 minutes or until golden and bubbly.

Mama’s Meatloaf (Miranda Lambert)

  • 2 lb. lean ground beef
  • 1 lb. ground pork sausage
  • 18 saltine crackers, crushed
  • 1/2 green bell pepper, diced
  • 1/2 onion, finely chopped
  • 2 large eggs, lightly beaten
  • 1 Tbsp. Worcestershire sauce
  • 1 tsp. yellow mustard
  • 1/2 cup firmly packed brown sugar, divided
  • 1/2 cup ketchup

Preheat oven to 350F. Combine first 8 ingredients and 1⁄4 cup brown sugar in a medium bowl just until blended. Place mixture in a lightly greased 11- x 7-inch baking dish, and shape mixture into a 10- x 5-inch loaf. Bake at 350F for 1 hour. Remove from oven, and drain. Stir together ketchup and remaining 1⁄4 cup brown sugar; pour over meatloaf. Bake 15 more minutes or until a meat thermometer inserted into thickest portion registers 160F. Remove from oven; let stand 20 minutes. Remove from baking dish before slicing.

Bacon-Mushroom Stone-Ground Grits (Zac Brown Band)

Total time: 1 hour, 15 min.

  • 8 oz. smoked bacon slices, chopped
  • 3 Tbsp. minced garlic
  • 2 cups chicken broth
  • 2 cups milk
  • 1 cup uncooked white stone-ground grits
  • 8 oz. wild mushrooms, chopped
  • 1/2 cup heavy cream
  • 2 Tbsp. butter
  • Table salt to taste
  • Freshly ground black pepper to taste
  • 11/2 cups (6 oz.) shredded white Cheddar cheese
  • 6 green onions, chopped

Cook bacon in a medium saucepan over medium heat, stirring occasionally, 7 to 8 minutes or until crisp. Remove bacon, and drain on paper towels, reserving 2 Tbsp. drippings in skillet. Cook garlic in hot drippings over medium-low heat, stirring constantly, 1 minute. Transfer garlic and drippings to a small bowl; set aside. Wipe saucepan clean with paper towels. Bring chicken broth and milk to a boil in saucepan over medium heat. Slowly whisk in grits. Reduce heat to low, and simmer, stirring often, 25 to 30 minutes or until grits are softened and smooth. Add mushrooms, cream, butter, and salt, and pepper to taste. Cook, covered, over medium-low heat, stirring occasionally, 10 minutes or until mushrooms are softened. Remove from heat; add cheese, green onions, and reserved bacon, garlic, and drippings. Serve immediately.

Missouri Dirt Cake (Sara Evans)

Total time: 11 hours, 20 min., including thawing and chilling

  • 1 (8-oz.) package cream cheese, softened
  • 1 (8-oz.) carton frozen whipped topping, thawed
  • 1(5.1-oz.) box instant vanilla pudding
  • 2 cups milk
  • 1/3 cup powdered sugar
  • 1 (14.3-oz.) package chocolate sandwich cookies (36 cookies), crushed and divided

Whisk together cream cheese and whipped topping in a large bowl. Prepare pudding using 2 cups of milk. Fold pudding and powdered sugar into cream cheese mixture.
Press 3 cups of crushed cookies in a lightly greased 13- x 9-inch baking dish; set aside remaining cookies. Spoon pudding mixture over cookies. Sprinkle reserved cookies over pudding. Cover and chill 3 hours. Enjoy!
